The name is derived from the word 'bakester,' which means 'woman baker.'
The name is written as 'pistor' in Latin charters, and between 1153 and 1177, William Pistor witnessed a grant by David Olifard to the Hospital of Soltre. Alfred Pistor was also one of the witnesses to a charter of the kirk of Haddington in 1188 and 1202.
In 1323, Thomas dictus Baxter, burgess of Irvine, made a grant for the support of a chaplain in the Irvine parish church, and Hutredus pistor was burgess of Roxburgh in 1330.
Kilmaron Castle in Fife, near Cupar
In 1312, William Baxtare was a crossbowman at Edinburgh Castle, and in 1398, Robert Baxter was an Aberdeen town official.
The surname is common in both Angus and Fife, where the Baxter family built Kilmaron Castle near Cupar around 1820.

Jim Baxter was a Scottish footballer who played in midfield for Raith Rovers, Sunderland, Nottingham Forest, Rangers, and the national team. He was born in Hill of Beath, Fife. He is widely regarded as one of the greatest Scottish football players of all time.
